What makes a real NY slice

Every slice is cut from a full 18 inch hand-tossed pie, so one slice is a proper meal: about 9 inches long, wide enough to fold, with a crust that is crisp underneath and soft inside.

It holds its shape when you pick it up. Fold it lengthwise like a New Yorker, eat it standing, walking or perched on a stool by the counter. That is the whole culture of the slice shop, and it is why we opened one in Bangkok.
